Mojito
"There are countless (and very similar) recipes for the Mojito, but this version is for the one Hemingway himself enjoyed at the Mojito's place of birth, La Bodeguita del Medio in Havana, Cuba. There are some that believe that the Mojito was actually born at La Floridita (well know for Daiquiris at the time). It's believe the Mojito came into existence some time between 1850 and 1920, during the modernization of the rum industry and the introduction of ice production." (link)

Recipe & Method
"Ingredients: 1 cl (0.3 oz) Lime Juice, 2 cl (0.59 oz) Rum, white/light, 0.75 oz (2.54 cl) Sugar Syrup, 4 oz (13.52 cl) Soda Water

To mix a Mojito cocktail, gently muddle mint leaves with simple syrup and lime juice in a mixing glass. Add ice and rum, then stir. Top it off with soda water. There are a couple ways to garnish a Mojito. Add a half lime (from the juice) with the ice before stiring, and/or sprig of mint leaves. *The use of limes is more traditional." (link)


"Ingredients: 2 parts White rum, 1 part Lime juice, top up Soda water, 10 Mint sprigs, 1 part Ice cubes, 1 Lime slice, 1 teaspoon Sugar

Mash the mint and sugar together. Add the (dark or light) rum and lime juice and pour over the ice. Top up with soda water. Use a highball glass." (link)


"Ingredients: 4 mint leaves, 1 lime (for juicing), 1 teaspoon powdered sugar, 2 ounces white rum, 2 ounces club soda, 1 sprig of mint (for garnishing), crushed ice

Put the mint leaves into a Collins glass and squeeze the lime juice over them. Add the powdered sugar and then muddle the mint, lime juice and sugar together. Add crushed ice. Stir in the rum and top off with the club soda." (link)


"Ingredients: 2 shots of Light Rum, 0.75 shots of Lime Juice, 0.5 shots of Sugar Syrup, 12 Mint Leaves, Top up with Soda Water

Gently muddle the mint and Rum in the glass, add the Lime, Sugar and lots of crushed ice, top up with Soda, churn well and serve. Serve in a Collins glass and garnish with a mint sprig." (link)


"Ingredients: 1.5 oz Rum, 12 fresh spearmint leaves, 1/2 lime, 7 oz club soda, 2 tbsp. simple syrup, (or 4 tsp. sugar)

For the smoothest majitos, gently crush mint leaves and lightly squeeze lime in a cool tall glass. Pour sweet syrup on top to cover and fill glass with ice. Add Bacardi Rum, club soda, and stir your emerging mojito well. Garnish with a lime wedge, a few sprigs of mint, toast, sip, and enjoy Bacardi mojitos with your friends." (link)


"Ingredients: 50ml Bacardi Superior, 8–10 mint leaves, 2 x barspoons caster sugar, 20ml fresh lime juice, Soda top, Lots of crushed ice

Method: Get yourself a nice clean glass. Roll your lime for 10–15 seconds on a chopping board. Cut your lime in half and place into a lime squeezer or use a normal everyday juicer. Squeeze 20ml of juice and collect these in a 25ml jigger i.e. just below the rim (you will normally need both halves, depending how juicy or large the lime is). Add 2 barspoons of caster sugar. Rip 8–10 mint leaves and place into the glass. With your barspoon, start to stir the 3 ingredients together, the sugar will dissolve into the lime juice and the mint will get coated in this…mmmmm. Fill the glass with crushed ice. Measure 50ml of Bacardi Superior and put into the glass. You will see that all the ingredients are lying on the bottom, so with your barspoon start to churn the ingredients. This will evenly distribute the mixture and make it taste delicious. Fill with more crushed ice, to create a nice snowcone and top with soda water. Get a mint sprig, which is a nice bunch of leaves at the top of a stem. Holding the base of the stem, slap the mint leaves in the palm of your hand or as I like to call it ‘Smack me mint up’. This will release yet more mint aromas and place in the top of your glass. Finally get two straws, bending one to create ‘rabbit ears’ and position next to the mint sprig." (link)


"Ingredients: White rum 50ml, 3 fresh mint leaves (large), 2 tsp sugar (the coarser the sugar the better, I definitely recommend brown), 3 tbsp fresh lime juice (you can use cordial, but fresh lime is much better), Soda water to taste, 5 crushed ice cubes

Method: Crush 2 of the mint leaves in a tall glass (you can use a fork or spoon for this), then add the sugar and the lime juice and stir through. Add the crushed ice to the glass. Then pour the rum and soda over the top, and then add the last sprig of mint and a slice of lime on top." (link)

Manhattan
"One of the finest and oldest cocktails. The Manhattan was the first cocktail that used vermouth as a modifier. As with a Martini, there are slight variations of the drink that are a matter of preference (see the list below). I had been under the impression for the longest time that a Manhattan used Canadian or bourbon whiskey but after a few traditionalist Manhattanite's comments and a couple of drinks I'm convinced that rye whiskey makes the best Manhattan. After all, it was the original whiskey used for the drink. Though, there was a time when rye was not as widely available or as good as it is today, but after a revival, rye is back. That said, ultimately, the choice is yours as the drinker and if you prefer another whiskey in your Manhattan, go with it." (link)

"A Manhattan cocktail is traditionally made with Rye Whisky and sweet vermouth though Canadian whiskey is also acceptable as an alternative to the Rye. As is usually the case with many of the cocktails that have a long and illustrious history, there are many variations of the initial classic version which are also worth investigating. If you are using a shot glass to measure consider they are usually 1.5 ounces though there is quite a bit of variation so check. Your shot glass size may vary from one and a half ounces, but the recipes below will work as long as you keep the correct proportions." (link)

But everyone agrees that the drink was indeed invented in the borough for which it was named, and as we've recently learned, to make a proper traditional Manhattan, you need to use rye whiskey—not the more commonly employed bourbon." Recipe & Method
"Ingredients: 1 dash (0.09 cl/0.03 oz) Angostura Bitters (Bitters, 5 cl (1.48 oz) Whiskey, Rye and Wheat, 2 cl (0.59 oz) Vermouth, sweet red

Method: To make a Manhattan cocktail, pour the Bitters, Rye Whiskey and Vermouth into mixing glass with ice cubes. Stir well. Strain into chilled martini or cocktail glass. Garnish with maraschino cherry. Enjoy your Manhattan!" (link)


"Ingredients: 2 oz rye whiskey, 1/2 oz sweet vermouth, 2-3 dashes Angostura bitters, Maraschino cherry for garnish

Method: Pour the ingredients into a mixing glass with ice cubes. Stir well. Strain into a chilled cocktail glass. Garnish with the cherry." (link)


Ingredients: 3/4 oz sweet vermouth, 2 1/2 oz bourbon whiskey, 1 dash Angostura bitters, 1 maraschino cherry, 1 twist orange peel

Method: Combine the vermouth, bourbon whiskey, and bitters with 2 - 3 ice cubes in a mixing glass. Stir gently, don't bruise the spirits and cloud the drink. Place the cherry in a chilled cocktail glass and strain the whiskey mixture over the cherry. Rub the cut edge of the orange peel over the rim of the glass and twist it over the drink to release the oils but don't drop it in." (link)


"Ingredients: 2 ounces rye whisky, 1 ounce Italian vermouth, 2 dashes Angostura bitters

Shake the rye,* vermouth, and bitters well with cracked ice. (Some insist that a proper Manhattan must be stirred, so as to prevent "clouding" or undue fraternization between the whiskey and the vermouth; Esquire says, let 'em mingle.) Strain into in a chilled cocktail glass and garnish with twist or, of course, maraschino cherry (which is subject to the same challenge re: purity as adding an olive to a martini)." (link)


"Ingredients: 2.5 shots of Bourbon, 1 shot of Sweet Vermouth, 1 dash of Old Fashioned Bitters

Add all the ingredients to the mixing tin, add lots of ice, stir thoroughly and strain. Serve in a Martini glass and garnish with a cherry." (link)


"Ingredients: 2 ounces of Rye Whisky, 1 ounce of the Sweet Vermouth, Dash of Angostura bitters, 1 Maraschino Cherry for garnish

Method: Put ice cubes in the martini shaker to chill the shaker. Add 2 ounces of your favorite Rye Whisky into the shaker. Add 1 ounce of Sweet Vermouth into the shaker stir the ingredients very well. Put a generous dash of the angostura bitter into a chilled martini glass and swirl it around so that the bitters coat the glass. Strain the contents of the martini shaker into the glass. Garnish with a maraschino cherry." (link)


Ingredients: 40ml American rye whiskey, 20ml sweet vermouth, 2 large dashes of Angostura bitters, Ice, A maraschino cherry, to decorate

Method: Stir 40ml American rye whiskey and 20ml sweet vermouth together over ice in a jug. Add 2 large dashes of Angostura bitters. Strain into a martini glass. A fun, kitsch decoration here is a maraschino cherry." (link)


Ingredients: 2 ounces rye whiskey, 1 ounce sweet vermouth, 2-3 dashes bitters

Method: Shake the rye, vermouth, and bitters with ice. Strain into a well chilled glass. Garnish with a twist or maraschino cherry." (link)


"Ingredients: 6 tablespoons rye whiskey, 3 tablespoons sweet vermouth, 2 dashes Angostura bitters, 1 maraschino cherry or an orange peel

Margarita

Recipe & Method
"Ingredients: 3.5 cl (1.04 oz) Tequila, 1.5 cl (0.44 oz) Lemon Juice, 2 cl (0.59 oz) Cointreau (Liqueur, orange)

Method: To make a Margarita, pour the tequila, lemon juice and orange liqueur into shaker with ice cubes. Shake well. Strain into chilled cocktail glass rimmed with crusted salt. Lime juice can be used in place of lemon juice. For fruit Margaritas, blend desired fruit with the above recipe." (link)


"Ingredients: 2 Measures Tequila, 1 Measure Cointreau, 0.5 Measure Lime Juice

Method: Prepare the cocktail glass by rubbing lime juice all the way around the edge of the glass and place on a saucer of salt to achieve the salted rim effect. Then add the Tequila, Cointreau and lime juice into a cocktail shaker full of ice and shake well together. Strain into the cocktail glass.

Garnish: Traditionally served in a salt rimmed glass (see method above), you can also add a sliced wheel of fresh lime if desired." (link)

Method: Rub rim of chilled cocktail glass with lemon wedge and dip in coarse salt to frost. Put cracked ice cubes in shaker with the tequila, triple sec and lime juice. Shake well. Strain into prepared glass and decorate with lime slice." (link)
